Differences Between Eggless and Egg Ice Cream
Some ice cream recipes do not call for eggs, while some do.
The recipe we chose to work with didn’t use any eggs.

- 2 cups of blackberries (frozen or fresh)
- ¾ cup of sugar
Ice Cream Base
- ¾ cup of sugar
- 2 cups of heavy whipping cream
- ¾ cup of milk
For the blackberries, you should process them with the sugar in a blender or food processor until it is smooth.
Put the mixture into the fridge for about two hours.
Leaving them in the refrigerator longer can enhance the flavor of the ice cream; strain the seeds if you want.
How It’s Done
To make the ice cream, you should mix the sugar and milk together in the stand mixer until the sugar dissolves.
Then, add your whipping cream and combine everything well.
At the end, stir in the blackberry mixture.
Retrieve your freezer bowl from the freezer and attach it to the KitchenAid mixer.
Put the dasher into the freezer bowl, following the directions.
Now, pour the mixture into the bowl.
Add the last special attachment to the mixer by sliding your dasher attachment onto the mixer.
Let the appliance run for about 25 to 30 minutes.
Since the bowl is open, you can look to see if the recipe is working correctly.
It could be done earlier than the 25-minute mark.
Therefore, you should check it periodically as the timer gets closer to zero.
You may also consider letting it run about five more minutes and then put it in the freezer to reach the desired consistency for scooping.
Tips for Making Delicious Ice Cream with the Attachment
Your ice cream maker attachment is likely going to be your new best friend.
While it fits most models, it can’t fit the Mini because the bowl is too big.
Plus, the Accolade mixer has a different base, so the bowl isn’t going to fit.
Before you get too excited, you should make sure that the ice cream maker attachment fits in the freezer.
Do this before you freeze the bowl.
The moment you remove the bowl from the freezer, you should use it immediately.
This is going to help with the process of attaching it while frozen.
Plus, it is also going to ensure that the ice cream mixture stays cold enough to form the sweet treat.
While you can store the freezer bowl in the freezer when it isn’t being used, you should not put the rest of the kit with it.
The rubber grips on the inside of the products can harden.
This means there is no “give,” which is necessary to allow you to press it on and run correctly.
Remember, it is possible to adjust your beater clearance to match the bowl.
Do this if your drive assembly doesn’t come into contact with the dasher.
Does the Drive Assembly Fit?
If the drive assembly doesn’t seem to fit, make sure the mixer isn’t a European model and has a DC motor.
You may also want to remember that the drive assembly isn’t going to fit tightly.
This allows it to move about and churn the ice cream more efficiently.
If it pressed onto the mixer but can’t click into place, there is a quick fix.
Try to hold the drive assembly in place with one hand and lower the motor head to the bowl so that it touches the dasher.
The Temperature of the Bowl and Batter
It is imperative that the freezer bowl is completely frozen before making ice cream and other frozen treats.
Make sure it stays in the freezer for at least 15 hours, but 24 hours is better.
If the bowl isn’t frozen after that, make sure that your freezer is set to the coldest setting possible.
Of course, you must use the bowl immediately after you remove it.
Waiting for just a few minutes more can affect the results of your ice cream.
Your batter needs to be cooled and chilled in the refrigerator.
Generally, you should wait about eight hours if the recipe was “cooked” or had warm items added to it.
Make sure that your ice cream bowl is attached and let the mixer start running.
Then, you can pour in your mixture.
Remember that the batter is going to grow in volume while it freezes, so ensure that it isn’t more than 46 ounces to make two quarts of ice cream.
Making Creamier Ice Cream
Once you have used your mixer to make ice cream, you may find that it isn’t quite as creamy as you want it to be.
If that happens, use a cream with a higher content of fat.
Low-fat versions are going to produce grainy results.
Solid ingredients can be added to the mixture.
These can include candies, nuts, or fruit.
Just make sure that you wait to add them between the 12- and 15-minute mark of the mixing process.
Removing and Storing Your Ice Cream
You can serve the ice cream immediately after the mixer has stopped mixing.
It is going to be a soft-serve consistency.
This means you probably can’t scoop it for cones, but you can still eat it from dishes.
If you want your ice cream to be harder, you should put the entire mixture into a container for freezing.
Consider making it a shallow container and use a plastic spatula or a non-metal spoon to remove your ice cream.
It’s not advisable to store your ice cream inside the freezer bowl.
This is going to make it rock hard, so it isn’t going to be easy to take out of the container.
Plus, doing this could cause damage to your bowl if you use a metal utensil to remove it.
Why It Is Good You Can See the Mixer Mixing the Ice Cream
In traditional ice cream makers, you can’t see what’s going on inside.
Therefore, some people worry about being able to see the mixture mixing in the stand mixer.
However, we think it is a good thing because you can watch how it changes and monitor its consistency.
The issue with other ice cream makers is that you can’t see what’s going on and how it’s forming unless you turn it off.
This can cause problems because it stops the process for a minute, which can cause the concoction to warm up too much.
On top of that, most machines have an automatic shut-off, and that could be too much or too little time for your particular ice cream mixture.
Being able to see what’s going on gives you more control.
You can stop the mixer when it looks done, or you can continue mixing even after the timer goes off if needed.

If you plan to use your mixer for ice cream, you need the ice cream mixer attachment.
Sadly, this doesn’t come with the product, so you must buy it separately.
Still, it is worth the money to have the mixer and attachment whenever the mood strikes for ice cream.
Making ice cream with KitchenAid mixer is quite easy.
It may take you a few times of using it before you realize how handy it is, though.
